Mother’s Mince Meat

About 4 lbs. beef Ground
1/2 bushel apples chopped
3/4 c. molasses or more
salt
cinnamon
allspice
nutmeg and a little cloves
3/4 lb margarine
2 or 3 cups sugar white
3 pkg raisins
juice from meat and little water if needed.

Cook slow

Hunter’s Pudding

1 cup finely chopped suet
1 cup molasses
1 cup milk
1 1/2 tsp. salt
ginger
cloves
nutmeg
cinnamon

Pour into buttered mold and cover.  Steam 3 hours.  Raisins may be added.

hmm.  “Hunter’s Pudding”.  Like Gentleman’s Relish but less sticky.

1 lb sliced bacon
14 eggs
1 1/2 c. cottage cheese
1 can crushed pineapple, drained
1 tsp vanilla
chopped fresh parsley, optional

Glorified Rice

I have actually had nightmares about this recipe.

Soak one box Jell-O (lemon) in water.
Cook enough rice for 2 cups cold rice.
After Jell-O is cool, whip and add medium sized can crushed pineapple (with juice), cold rice, and one cup whipped cream.  Add 1/2 c. sugar, or as sweet as you like.  Serves eight to ten.

Fish Pudding

1 lb haddock or cusk (?) fish sticks
4 cup water, 2 T. salt
1 very small onion, 3T. shortening
3T. flour
1 cup milk
1/2 tsp pepper
1/2 tsp salt
one can peas drained
1/2 cup crushed corn flakes

Pickled Pumpkin

to 1 qt vinegar add 3 cups white sugar.  1 or 2 cinnamon bark, thimble of cloves put in a bag and take out after theya re done.

Fruit Salad (3 layer)

1 can fruit cocktail-medium sized can
1 pkg cream cheese
a little mayo
cream
lettuce
colored J-ello and plain gelatine
1 T. plain gelatine moisten in 1/4 c. water and dissolve in 3/4 cup boiling syrup drained from cocktail. (cool)

1/2 c. butter, melted
1/2 c. mushrooms sliced (one small can)
1 8 oz can sliced water chestnuts, undrained
