<li>1 3/4 c. water</li>
<li>1 package (4.5 oz) Uncle Ben&#8217;s Country Inn Brand Broccoli Rice Au Gratin</li>

<li>1/4 tsp. dry mustard</li>
<li>1 3/4 c. chicken broth or bouillion</li>
<li>2 c. milk</li>
<li>1/2 c. shredded American cheese</li>
<li>1 green onion cut into short, thin strips</li>
</ul>
<p>Cook onion in butter in large saucepan until tender.  Add water and contents of rice and seasoning packets.  Bring to a boil.  Reduce heat, cover and simmer 20 mins.  Combine flour and dry mustard in a small bowl.  Gradually add about 1/2 c. of the broth, stirring until smooth.  Stir remaining broth, flour mixture and milk into rice mixture.  Heat to a simmer, stirring occasionally.  Continue simmering until slightly thickened.  Stir in cheese.  Sprinkle with green onion.  Makes four to six servings.</p>

<p>Heat cheese first, add all other ingredients, then finally add half and half to the right consistency.  Sauce will harden quickly so add more half and half than assumed.</p>

<p>Finely chop onion and cook until transparent in oil or butter.  Add can of tomato soup and the milk.  Let heat.</p>
<p>Add 3/4 lb. cut-up cheese (use 1 lb. if you prefer).  Melt.  Season with salad mustard, worcestershire, salt, pepper and a few grains of cayenne.  Season to taste.</p>
<p>Ten minutes before serving, beat 2 whole eggs, and add to mixture.  Let thicken.</p>
<p>Serve over saltines, or toast.  Excellent over rice which has been cooked with 2 T. butter, and about 12 stuffed olives added to the rice.</p>
<p>Use processed cheese, if desired.  Flavor will be riper is old-fashioned rat trap cheese is used.</p>
<p>Serves 4 generously.</p>

<p>&#8220;Cook in wesson oil until limp.&#8221;  Well doesn&#8217;t that just make you want to run out and make this recipe?  I can actually vouch for this recipe&#8230;.I have made it many times, it is one of my husbands favorite foods.  In fact, he is sick and I am making it for him for dinner.  I do not use the wesson oil though.  I use butter.  About a tablespoon, and if the casserole doesn&#8217;t mix up all smooth like I add a glug of olive oil.  TADA!</p>
