Quiche

(Written as “Quish” on the recipe card.  Perhaps that is a quiche with a potato crust?)
Crust:

3 cups grated potatoes
3 T. oil
1/2 tsp. salt

Mix and line 10″ pie plate and bake at 425 for ten minutes
Filling:

1/4 c. chopped onion
3/4 c. chopped meat
1 c. grated cheese

Layer in given order into crust
Topping:

2 eggs
1 c. milk
1/2 tsp. salt

Creamy Broccoli Au Gratin Soup

2 T. butter or margarine
1/2 c. chopped onion
1 3/4 c. water
1 package (4.5 oz) Uncle Ben’s Country Inn Brand Broccoli Rice Au Gratin
1/4 c. flour
1/4 tsp. dry mustard
1 3/4 c. chicken broth or bouillion
2 c. milk
1/2 c. shredded American cheese
1 green onion cut into short, thin strips

Grandma’s Cheese Ball

My family apparently has a lot of cheese ball recipes.

 1 stick butter
2  8 oz.  cream cheese
2 c. shredded cheddar cheese
1 T. chopped onion
2 T. Worcestershire sauce
1 tsp lemon juice
1 T. each pimento and green pepper

Mix together. Form into ball.  Chill.

Queso Cheese Sauce

This stuff is yummers.  A block is a pound I think.

1/2 block yellow American cheese
1/2 small can diced green chilies
1 roasted red pepper (peeled and diced)
2 tsp cayenne
Dash of salt
half and half until desired consistency

Heat cheese first, add all other ingredients, then finally add half and half to the right consistency.  Sauce will harden quickly [...]

Red Devil

1 small onion
2 T. oil or butter
1 can tomato soup
1/4 c. milk
2 eggs
3/4 lb. cheese
1 tsp salad mustard
3/4 tsp Worcestershire sauce
salt, pepper, cayenne

Finely chop onion and cook until transparent in oil or butter.  Add can of tomato soup and the milk.  Let heat.

Cheese and Rice Casserole

2 c. cooked rice
2 c. grated sharp cheese
1 c. fresh cut-up parsley
2 onions
1 clove garlic minced
1/3 c. wesson oil
2 eggs beaten
2 c. milk
1 tsp salt
dash of red pepper

Simmer onions and garlic in wesson oil until limp.  Combine all ingredients and put in uncovered casserole.  Bake at 350 for 40 mins to an hour.

Prairie Fire Dip

1 can pinto beans, put through sieve
1/4 lb. butter
1/3 lb. Cheddar cheese
2 Jalapeno peppers canned and a little of juice
1 med. onion grated
1 pod garlic chopped fine

Mix and heat all in top of double boiler until cheese is melted.  Keep warm and serve with corn chips.  Especially recommended for a beer party.

Red Cheese Ball

1/2 lb. grated Cheddar Cheese
1/2 cup chopped ripe olives
1/2 tsp. Worcestershire sauce
1 3 oz. pkg. cream cheese
3 T. sherry
Dash of onion, celery, and garlic salt
MSG if wanted

Form into ball and roll in 1/2 c. dried beef which has been chopped.

Bleu Cheese Ball (AKA Green Cheese Ball????)

1/4 lb Danish Bleu Cheese
2 T. finely chopped onion
3 5 oz jars bleu cheese
1 T. finely chopped celery
2 T. sour cream

Form ball and roll in one cup chopped parsley.
