Babooti (South African curried meat loaf)

  • lean beef ground up-chuck steak is good–1 lb.
  • 1 slice stale bread-soaked in milk
  • 1 soup spoon apricot jam
  • 1 T. curry powder
  • 1 egg
  • 1 medium onion

Soak bread in milk and squeeze out dry.  Fry onions in butter a golden brown.  Mix curry powder, jam, 1 tsp. salt with fried onions.  Mix with meat, the soaked bread and the beaten egg; and the onion mixture and about 1/2 c. milk.  Put into a loaf pan and cook about one hour.  Two or three times (last 1/2 hour) during the baking, baste with a beaten egg and milk and dot the top with butter.  Just at the end sprinkle with coconut and let it toast a little bit.  Serve with rice and chutney.
