Pineapple Upside Down Cake

Melt 1/2 c. butter in a pan.  Add one cup brown sugar and spread evenly over bottom of pan.  Lay complete wheel of pineapple.  Put cherry in center of each pineapple slice.

Sponge batter:

  • 2 eggs
  • 1 c. white sugar
  • 5 T. pineapple juice
  •  1 c. flour
  • 1 tsp baking powder

Pour over fruit and bake 45 – 60 mins in moderate oven.

This recipe has serious stains all over it, along with chunks of flour and pineapple.  Super-stained recipes always make me think that they are good, because they have obviously been used.  I am not a fan of the pineapple cake, but my husband loves it.   Maybe I will make this for him if he is nice.
