Casserole for the Crowd

from Judy:

  • 1 1/2 lb. ground beef
  • 1/2 to 1 c. chopped onion

Brown in skillet and drain.

  • 2/3 cups cooked narrow noodles
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup commercial sour cream
  • 1 can #2 whole kernel corn (drained)
  • 1 small jar red pimento
  • 1 tsp. Accent (MSG)

Cover with buttered and salted bread cubes and bake at 350 until browned.

I am betting that this recipe dates from before my ENTIRE extended family had heart attacks. Thanks Aunt Judy!

    “For the crowd?” Speaking on behalf of the unwashed masses, I am deeply offended that this is the dish you choose to name after us and present to us. And it doesn’t even include Ranch Dressing! Shame on you, Ehme!

    Hi there, wow, that sounds pretty good, but would be a little high in saturated fats for the church ladies I’ll be feeding, so I plan to sub 1 1/2 pound of ground turkey, cooked with olive oil spray and a light sprinkle of Worchester sauce to help it taste more like beef. Then we’ll use the fat-free sour cream, stirring it in last, and top it all off by stirring in some finely chopped broccholi to give it more fiber and color. If I use about 2 cups, it will also extend it to feed 2 more people and help to offset the fat in the cream soups. I haven’t figured out how to sub for those yet, but I’m working on it. My light casseroles always disappear first at Third Sunday Potluck, because everybody wants to keep it light to save room for my FUDGE! This batch will be going to the funeral of the son-in-law of one of my favorite church ladies, she’s like a second mother to me. Best wishes! Your recipes totally ROCK!

    Thanks Emily! I find that the low fat cream soups work just fine in recipes like this, or you could try substituting greek 0% fat yogurt (Fage brand is the most recognizable) and some no salt chicken seasoning. I hate cream soups and always use the low fat low sodium versions.

    Where on Earth would I find such a wonderful substance in Roswell, NM? These people think you buy sugar free items over at the drug window at the hospital…well, they aren’t all that silly, but even in a size 22, I see plenty of gals here who make me look like Twiggy. Do you remember Twiggy?
    Is there by any chance an online source for this nectar of the slender gods?

    I do remember Twiggy! If you have a large chain grocery store near you, I would check the cooler section of the “health food” section, or the yogurt section. Sometimes “Super Walmarts” have them, but it is rare. You can also buy it on Amazon.com, but I think it is kind of scary to have yogurt mailed to you. It is super yummy though, and even though it is fat free it tastes like sour cream, I use it all the time in place of cream or sour cream.
