Beef Volcanoes

I LOVE these things.  I don’t think I have had them since I was about 14, but I am making them ASAP.

  • 1 1/2 lb ground beef
  • 2 eggs
  • 3/4 c. tomato juice
  • 1 1/2 c. quick oats
  • 1/4 c. chopped onion
  • 1/4 T. dry mustard
  • 1 T. Worcestershire sauce
  • 1 1/2 tsp. salt
  • 1/4 tsp pepper
  • 1 c. tomato juice
  • 10 1″ square cheese pieces

Mix all ingredients except tomato juice and cheese.  Shape into balls.  Press cheese squares in centers.  Place in greased casserole and pour tomato juice over top.  Bake 35-40 minutes at 350°
