Girl Scout Thin Mints

1 18.5 oz pkg Betty Crocker Chocolate fudge cake

3 T. shortening, melted

1/2 c. cake flour, measured then sifted

1 egg

3 T. water

non stick cooking spray

Coating:

3 12 oz bags semi sweet chocolate chips

6 T. shortening

3/4 t. peppermint extract

Combine cookie ingredients in a lg bowl, adding the water a little bit at a time until dough forms.  Cover and chill 2 hours.  Preheat oven to 350..

On lightly floured surface, roll out a portion until just under 1/16th of an inch.  To cut use a lid from a 1 1/2 in diameter spice jar.  Bake 10 mins.  Cool completely.

Combine choc chips w/ peppermint and shortening in microwave safe bowl.  Heat on 50% for 2 mins.  Stir.  Heat one more min.  Use a fork to dip each wafer, tap the fork to shake excess drips off.  Put on wax paper lined baking sheet.  Chill till firm.

I vaguely remember making this recipe, and there are chocolate smears all over it, so I am fairly certain I did….but I have no memory of how they tasted or where I got it.  I am assuming they are not awful, or I probably wouldn’t of kept it.
