Cream Cheese Icing

2 8 oz. pkgs cream cheese softened and cut into small pieces
6 T. unsalted butter room temp, cut into small pieces
1 1/2 tsp. vanilla
5 c. sifted confect sugar
Beat the cream cheese and butter until smooth, about 3 mins. Add the vanilla and beat well. Gradually add the sugar 1 c. at a time, beating continuously until smooth. Cover and refrig 2-3 hours. NO LONGER THAN THAT.

The best cream cheese frosting ever. I use it all the time. If you want chocolate, just add less confect sugar and replace with powdered cocoa.
