1 lb ground beef

1 1/2 c chopped onion

1/2 tsp salt

1/4 tsp pepper

3/4 cup Bisquick baking mix

1 1/2 cups milk

3 eggs

2 tomatoes sliced

1 cup shredded Cheddar or process American cheese

Heat oven to 400

Grease pie plate, 110 x 1 1/2.  Cook and stir beef and onion in 10″ skillet until beef is brown, drain.  Stir in salt and pepper; spread in plate.

Beat Bisquick, milk and eggs with wire whisk or hand beater until almost smooth, about 1 min.  Pour into plate.

Bake 25 min.  Top with tomatoes and cheese.  Bake with knife inserted in center comes out clean, 5 to 8 min.  Cook 5 min.  Garnish with lettuce.
