Lemon Cheese Bars

1 c. all-purpose flour

1/3 c chopped walnuts

1/3 c. light brown sugar

1/3 c. unsalted butter

juice and rind of one small lemon

1 c. full-fat cream cheese

1/4 c. granulated sugar

1 T. milk

1 egg

1/2 ttsp vanilla extract

makes 24 bars

Beat together the flour, walnuts, brown sugar and butter and form it into a soft crumbly dough. Divide the dough into 2. Press one piece of the dough into a greased 9×9 pan. Bake in the oven for 12 to 15 minutes, until lightly browned. Remove from the oven. Beat together the lemon juice and rind, cheese and sugar, then beat in the milk, vanilla and egg. Spoon the cheese mixture over the partly cooked pastry and sprinkle the remaining mixture evenly over the top. Bake for further 25 minutes, until the top is golden. Cool then chill. Cut into bars.
